Muffin Recipe

3 bananas/thoroughly mashed

1 egg

1/8 to ¼ cup olive oil

2 dashes cinnamon

1 teaspoon vanilla

1 dollop (or, perhaps, a bit more, depending on taste) molasses

1 cup maple syrup (grade B is best)

¾ cup oats

2 tablespoons millet

1 ¾ cups flour (spelt/whole wheat)

2 cups skim milk

3 cups bran

1 teaspoon salt

1 ½ tablespoon baking powder

(bran and milk go in last)

mix thoroughly

bake at 375 F for 25 to 35 minutes
